Freeze dryers (lyophilizers) offer significant advantages in the production of freeze-dried Cordyceps. It is well known that fresh Cordyceps has a superior appearance—plump and golden—compared to traditionally heat-dried Cordyceps, along with higher nutritional value. Conventional high-temperature drying leads to substantial nutrient loss (approximately 50% loss of cordycepin and 40% loss of adenosine), whereas freeze-dried Cordyceps effectively retains over 90% of cordycepin, over 90% of adenosine, as well as heat-sensitive components such as polysaccharides, minerals, and proteins.
Freeze-drying technology significantly extends the shelf life of Cordyceps by employing low-temperature vacuum dehydration, solving the problem of fresh Cordyceps being prone to spoilage at room temperature and making it easier to store and transport. Due to rapid freezing and vacuum dehydration, the discoloration of cordycepin (which is highly sensitive to heat and prone to fading) is effectively prevented, preserving the natural golden-yellow hue of the Cordyceps.
Pilot-scale freeze dryers can be used not only for freeze-drying fresh Cordyceps but also for processing other medicinal herbs such as ginseng, angelica, and reishi mushrooms. Vacuum freeze-drying technology overcomes the limitations of traditional high-temperature drying, preserving the nutritional content of medicinal herbs while extending their shelf life.
